This is so easy, I’ve been doing it since I was about 8 years old. It’s still yummy and filling and fairly low-carb. I just love the cold & crunchy celery topped with salty peanut butter and sweet dried fruit!
INGREDIENTS
- Celery
- Peanut Butter
- Raisins, Dried Cranberries, or other dried fruit
DIRECTIONS
- Clean celery & chop off ends
- Fill concave side with peanut butter
- Top with raisins or other dried fruit
I’ve been told you can use cream cheese instead of peanut butter, but that sounds weird to me.
I keep this low-carb by using “old-fashioned” peanut butter. The only ingredients are “peanuts, salt.” This means it separates a lot and I have to do quite a bit of stirring, but it works for me.
If you use regular raisins, it’s just ants on a log. If you use dried cranberries, it’s fire-ants on a log. Apparently there are a few species of ants that are yellow in color, so golden raisins = yellow ants on a log?
Anyway, I love eating this for breakfast.
